I found out two things tonight.
Firstly...making crackers is not that difficult. And - they are amazing!!
And secondly...I need a pastry cutter. I was never much of a pie person but if I'm gonna continue with any more cracker adventures then I'd be better off with one!
Gluten Free Buckwheat Hemp Crackers
2 cups organic dark buckwheat flour
2 tbsp hemp butter
1 tbsp maple syrup
2 tbsp organic sunflower oil
1 tsp sea salt
2/3 cup organic brown rice milk
white rice flour for rolling dough
garnish with additional sea salt if desired (up to 1 tsp)
Method:
Preheat oven to 425 F. Use ungreased cast iron cookie sheets for best heat distribution.
Combine all ingredients except the rice milk with a pastry cutter (or cut with a wooden spoon or your fingers). Mix this until the mixture looks a bit crumby.
Slowly stir in the rice milk until the dough pulls away from the sides of the bowl. The mixture should be soft and you should be able to form a ball with the dough easily (it should not be runny or sticky).
Divide the dough into balls (2-4 depending on the size of your sheets). Lightly dust a dry surface with rice flour and roll the dough into a sheet 1/8" or thinner.
Trim the uneven edges (if desired) and use a spatula to lift the dough onto the sheets. Use a sharp knife or a pizza cutter to score the dough into desired cracker shapes.
Sprinkle the top with salt if desired and press into dough. Bake for 6-8 minutes or until the edges start turning up. Take sheets out of oven and turn over the crackers using tongs or gently with a spatula.
Return to the oven and bake an additional 5-7 minutes or until the edges are well browned. Remove from oven and cool crackers completely on racks.
Break crackers apart (if needed) and store in an airtight container in the fridge or freezer.

Great Post! That looks delish!!
I am launching my blog in a few weeks and am looking for various "featured writers" to hi-light...Physical Therapists, Massage Therapists, Personal Trainers, Doctors, Counselors, etc...
I have been following your blogs and have really enjoyed what you are trying to do here, Orla. People need this!!!
If you are interested in being a featured writer with my website it just means that you have to submit ten co-blogs (I can pick them out from your archives if you wish) after each blog I will include your picture, contact information and link back to your website. This will also be included on the featured writers page along with your bio. When I talk about the healing powers of certain foods I would like to include recipes from your blog either as a link or in entirety. I would then just need permission to copy new posts at whim that I think will be specifically helpful to my readers at my site and your email address so WP can notify you when you have comments! The blog will be going officially public in two weeks and launched to the medical community at large in another month.
I would love to have you on board as the offficial "Dairy Free Wheat free expert" at Kitchentablemedicine.com
Stop by my website and let me know if you are interested in doing this officially!
:D Dr. Nicole
I am truly honoured by your request Dr. Nicole. It is the topper to a great day....read on...
Your site is looking wonderful and I'm very willing to take part of your endeavour. Like I said, I am honoured to participate in the kind of site everyone needs. Your postings so far have been very helpful and totally in tune with my knowledge of health (an amateur expert with 20 years of internet knowledge gleaning).
But back to these crackers and my great day.
I had a wonderful lunch today (I wish I took a picture) prepared for me by the owner of this amazing Toronto food company (Vegan Delights). He gave his stamp of approval to these crackers and it has made my day too!
These look great! I love hemp (buckwheat too). I have done flax crackers and crisps and various buckwheat thingies, but the addition of hemp butter you use makes yours amazing I bet! I can't wait to try. I don't have hemp butter on hand, do you think I can "make" is by grinding shelled soft hemp seeds? Or is it better to just buy a tub of the hemp butter? Thanks
xoxo
Cindy
Hi Cindy...I loved these and really need to make them again!
I would use the hemp seed butter rather than trying to make my own....unless you have a very powerful nut blender which would grind the seeds into a smooth paste.
I order all of my hemp products in bulk directly from the manufacturer (linked in my recipe). This makes the overall cost much more affordable (the smaller portions of these products in the health food stores can be quite pricey!). I am starting to post prices and sources directly onto my new recipes so that people can get an idea of the costs and sources of healthy foods.
The hemp products keep in the freezer for up to one year and I portion out smaller quantities into glass jars as I need them and store these in the fridge.
Let me know if you do make them...I will try and make them again soon myself!
